SHIRLEY NGUYEN, 30, pastry chef
extraordinaire, created a lovely Easter
cake adorned with three simple eggs
bearing the Chinese symbols for Faith,
Hope and Love.
"I used a roll fondant, gum paste and
royal icing for the grass," notes
Nguyen, who, before being formally
trained in the culinary arts at George
Brown and various restaurants, was a
Toxicologist and researcher working for
The Centre for Addiction and Mental
Health "finding a cure for heroin
addiction. It was fascinating work -
But I always loved baking and creating
more."
So six years ago she went back to
school and now creates beautiful works
Of art - her wedding cakes are
